Gather your ingredients!
With your stock pot on the appropriate burner, set to medium heat. Add in the Pork fat and heat for approx 1 min.
When the fat (or oil) is heated, put your chopped onions in (when you start putting your ingredients in, you want to hear a sizzle). Cook until just before translucent, about 5 minutes.
Add in your garlic and cook for 1 min. Be careful not to burn!
Add in your ground beef, 1 tsp thyme, 1 tbsp Italian seasoning, a pinch salt and pepper.
Stir everything in your pot until thoroughly mixed and your meat is browned.
Once the meat is browned, add in your stewed tomatoes and tomato paste. Stir to combine.
Add in the Worcestershire sauce and light brown sugar, as well as the remaining thyme (1 tsp), and Italian seasoning (1 Tbsp).
Bring sauce to a boil, then reduce heat and let simmer for about 30 min at least to let all the flavors combine. If you feel the sauce is a bit watery, let it cook for at least an hour or more until you get the right consistency you are looking for. Keep in mind the longer the sauce simmers, the more the flavors will combine!
While the sauce is simmering Bring a separate pot of water to a boil. Add in the noodles and cook per the packages cooking recommendations.
When the noodles and sauce are done, place a desired amount of noodles on a plate, top with the meat sauce and enjoy!
